Grapes cold fermented at 10°, maceration for 3 weeks. Time does its work, and the only action is a bi-weekly analysis to monitor the wine's evolution. No sulfur added at harvest or during vinification.
Breeding
1 year ageing 50% in concrete vats & 50% in 3-wine Burgundy barrels. Racking, 15-20mg co2, neither fined nor filtered.

About the domain :
This is the estate of Jean-Paul Thévenet's son, Charly, who bought vines in Régnié a few years ago and released his first vintage in 2007. Biodynamic viticulture, late harvesting, gentle maceration and low sulfur dioxide levels during aging in old barrels are the order of the day. The style is elegant and delicate, emphasizing charm and aromatic complexity over brute force, and the wines tend to age gracefully.
