The palate is vibrant on the attack, with crisp acidity, notes of orange peel and a hint of mulberry leaf. "Overlooking the village of Saint-Aubin, this south-facing climat of 5.24 ha takes its name from an old quarry from which thin slabs of limestone were extracted. Agnès Paquet has produced a wine from it that was cited last year, and acclaimed this year. We praise its limpid pale gold color, the mineral richness of its nose, which also exudes citrus fruit, white flowers and toasted hazelnut, then its elegant, taut palate of rare length.
