Domaines Laroche
A Chablis, la qualité des sols de l’étage géologique kimméridgien contient ce qu’il faut de calcaire pour apporter le caractère minéral, les cailloutis nécessaires à un bon drainage, l’argile en sous-sol pour conserver suffisamment d’eau et enfin une bonne exposition au soleil dans une région qui souffre rarement d’excès de chaleur. Au sein des Domaines Laroche, tout est réuni pour produire de grands vins de Chardonnay. La vendange se fait à pleine maturité, mais en veillant à ne pas aller trop loin de manière à conserver la fraîcheur des arômes du Chardonnay. Les pressoirs pneumatiques à basse pression respectent la qualité du raisin. Les Petits Chablis et Chablis des Domaines Laroche sont en général mis en bouteilles à partir d’avril alors que les Premiers et Grands Crus attendent de 11 à 14 mois pour parfaire leur élevage.
