The presence of bluish clays and the predominantly early morning sunshine give the "Blanchots" a very special character, giving the wine a dominant floral character and remarkable finesse, all in fullness and generosity, of great harmony, with a very mineral, slightly iodized and smoky finish. The mineral purity of this wine is the perfect accompaniment to Japanese cuisine featuring raw fish (sea bream sushi or pollack maki, for example). As an alternative, grilled or casseroled white meats will be perfect, in a register of tenderness and smoothness. For cheeses, opt for small, fresh goat's cheeses or herbed faisselle.

About the domain :
Cécilia Trimaille has just taken up residence in Chablis, replacing Matthieu Mangenot at the head of Domaine Long-Depaquit, the Chablis branch of the Bichot family since 1970. The vineyard here is one of the most extensive in the region, covering 65 hectares, including 5 of the appellation's 7 grands crus (not counting the famous monopole de la Moutonne), and a tasting here gives a good overview of the diversity of terroirs in the area. Good 2017 despite the spring frost that affected volumes more than quality. With the exception of the disappointing premier cru les-lys, all the other cuvées tasted to their advantage.

About the domain :
Albert Bichot is the owner of Domaine Long-Depaquit in Chablis, a prestigious range of crus, including the monopole Grand Cru La Moutonne, which enjoys the sunniest exposure in the appellation. The wines often express a roundness and generosity that make them accessible when young. If the range seems more homogeneous, the expression of terroirs can certainly gain in intensity and precision. Cécilia Trimaille, 31 years old and the new managing director, will do her utmost to accompany this progress.
