At the heart of the Grands Crus zone, the Vaudésirs valley is an open book on the geology and history of the Chablis vineyards. This wine has captured all the tension of the vintage, with acidity that is present but not excessive, making it a typical representative of a Chablis Grand Cru: mineral and taut at the same time!

Food and wine pairing
Echoing the precision of this grand cru and its rank, the best pairings will involve the use of the noblest ingredients worked with a small dose of audacity, combined with a quest for great freshness. Try seasonal asparagus with mayonnaise-mousseline, or zucchini espuma with fresh goat's cheese and lemon thyme.

Expert opinion
Bettane & Desseauve
Domaine rated (2020 guide) 3*Stars (High-quality production that can serve as a benchmark in its sector)
About the domain :
Cécilia Trimaille has just taken up residence in Chablis, replacing Matthieu Mangenot at the head of Domaine Long-Depaquit, the Chablis branch of the Bichot family since 1970. The vineyard here is one of the most extensive in the region, covering 65 hectares, including 5 of the appellation's 7 grands crus (not counting the famous monopole de la Moutonne), and a tasting here gives a good overview of the diversity of terroirs in the area. Good 2017 despite the spring frost that affected volumes more than quality. With the exception of the disappointing premier cru les-lys, all the other cuvées tasted to their advantage.

RVF - La Revue du Vin de France / Guide des Meilleurs Vins de France
Domaine noté (guide 2020) Sélectionné (We remind you that this guide is a prize list and as such, all the estates that appear in it, even without a star, represent, in our eyes, the excellence of French production).
About the domain :
Albert Bichot is the owner of Domaine Long-Depaquit in Chablis, a prestigious range of vintages, including the Grand Cru La Moutonne, which benefits from the sunniest exposure in the appellation. The wines often express a roundness and generosity that make them accessible when young. If the range seems more homogeneous, the expression of terroirs can certainly gain in intensity and precision. Cécilia Trimaille, 31 years old and the new managing director, will do her utmost to accompany this progress.
