Situé sur la rive gauche du Serein, à l'orée de Chablis, le climat "Les Vaillons" renferme le secret d'un terroir intemporel. Le chardonnay s'exprime dans un registre floral bien net, suivi de notes finement boisées et de fruits frais. Un vin à la tension et à la minéralité parfaites !

Il faudra équilibrer la tension et le caractère minéral de ce vin avec des plats présentant une belle palette de saveurs et une chair bien présente. On pense par exemple à une marinade de saumon à l'aneth et sa charlotte tiède de poireaux au balsamique pour le contraste des saveurs. Sur une volaille grillée, le croquant de la peau et le fondant de la chair seront un bon contrepoint à la finale boisée et la précision du vin... <br/>

About the domain :
Cécilia Trimaille has just taken up residence in Chablis, replacing Matthieu Mangenot at the head of Domaine Long-Depaquit, the Chablis branch of the Bichot family since 1970. The vineyard here is one of the most extensive in the region, covering 65 hectares, including 5 of the appellation's 7 grands crus (not counting the famous monopole de la Moutonne), and a tasting here gives a good overview of the diversity of terroirs in the area. Good 2017 despite the spring frost that affected volumes more than quality. With the exception of the disappointing premier cru les-lys, all the other cuvées tasted to their advantage.

About the domain :
Albert Bichot is the owner of Domaine Long-Depaquit in Chablis, a prestigious range of crus, including the monopole Grand Cru La Moutonne, which enjoys the sunniest exposure in the appellation. The wines often express a roundness and generosity that make them accessible when young. If the range seems more homogeneous, the expression of terroirs can certainly gain in intensity and precision. Cécilia Trimaille, 31 years old and the new managing director, will do her utmost to accompany this progress.
