Pressed in a pneumatic press, the juice remains in temperature-controlled vats for 24 to 30 hours, before undergoing cold static settling. Alcoholic and malolactic fermentation takes place 100% in barrels.

10 months in 100% Burgundy barrels, including 30% new barrels, followed by 2 months in vats

Based in Mercurey, Amaury Devillard and his sister Aurore took up the challenge in 2005 of taking over the entire distribution of the family's various estates: Ch. de Chamirey and Dom. de la Ferté (Côte Chalonnaise), Dom. des Perdrix (Côte de Nuits) and Dom. de la Garenne (Mâconnais).
