Whole grapes are pressed for 2h30 in a pneumatic press, then the juice is run off into stainless steel vats where it is settled overnight at 12 degrees Celsius. for alcoholic fermentation
Breeding
12 months in new barrels and part in old barrels, then racking and additional ageing for 4 months in 68hL wooden vats, then the remainder racked into stainless steel tanks, lightly filtered before bottling.

About the domain :
Francine Picard, Michel's daughter, puts all her considerable energy and idealism into reshaping the style of wines from the family empire, 140 hectares of vines. Since May 2019, she has been supported by biodynamic consultant Antoine Lepetit, her new technical director. The estate will be certified organic at the end of 2019, and the changes are set to continue with even more precise vinification and ageing. A wide range of top-quality red and white cuvées gives a real insight into the different climates of the Chassagne and Saint-Aubin area.
