Ce domaine familial est situé au cœur du village de Saint-Romain. A l’arrêt du domaine familial en 2000, étant trop jeune pour le
reprendre, mais passionné par le métier, Nicolas Fèvre fait ses études au lycée viticole de Beaune
puis passe le Diplôme National d’Œnologue. Une fois ce dernier en poche, pour acquérir de
l’expérience et voyager, Nicolas Fèvre part faire quelques vinifications à l’étranger: aux Etats
Unis, en Australie et en Afrique du sud.
A son retour, à partir de 2009, Nicolas Fèvre devient œnologue conseil dans un laboratoire d’analyse de
vin. Puis en 2013, le rêve se concrétise et Nicolas Fèvre parvient à récupérer les vignes de ses parents auparavant mises en location. C'est l’occasion de s’installer comme viticulteur en activité secondaire et de produire Saint Romain blanc, Saint Romain rouge, Auxey-Duresses rouge et Bourgogne Aligoté sur les parcelles familiales.
Le vignoble est cultivé de manière raisonnée avec fertilisation organique, travail du sol par labour, taille guyot
simple.
Ne sont pas utilisés sur le domaine : désherbants, engrais chimiques, insecticides ainsi
que les traitements anti-pourritures. Les vendanges sont manuelles, la vinification se veut la plus naturelle possible avec peu d'interventions.

Auxey-Duresses, est situé au seuil d’une vallée qui, depuis la Côte de Beaune, s’enfonce dans les Hautes Côtes sur la route de La Rochepot et d’Autun. De couleur rubis ni trop clair, ni trop sombre, cet équilibre se poursuit au nez, riche en petits fruits tels que framboise et cassis agrémentés d'une touche d'épices. En bouche encore, le vin se révèle fin et souple dès l’attaque, séveux, tannique, boisé avec élégance, sans manquer de fraîcheur.
Domaine encore confidentiel, c'est avec bonheur que l'on découvre les cuvées de Nicolas Fèvre. Résultant d'une vinification la plus naturelle possible, ce Saint-Romain arbore une robe rouge intense et profonde. Le nez est aérien, sur des notes de
fruits rouges (framboise cerise) avec un boisé fondu. En attaque les tanins sont fins et
soyeux avec de la structure en finale et une bonne longueur.
