This family estate is located in the heart of the village of Saint-Romain. When the family estate came to an end in 2000, Nicolas Fèvre was too young to take it over. but passionate about the business, Nicolas Fèvre studied at the Lycée Viticole de Beaune then passed the Diplôme National d'Œnologue. Once this diploma was in his pocket, Nicolas experience and to travel, Nicolas Fèvre left to do some winemaking abroad: in the United States Australia and South Africa. On his return in 2009, Nicolas Fèvre became a consultant oenologist in a wine analysis laboratory. laboratory. Then, in 2013, the dream came true, and Nicolas Fèvre succeeded in recovering his parents' vines, which had previously been leased. This gave him the opportunity to set up as a secondary winemaker, producing Saint Romain blanc, Saint Romain rouge, Auxey-Duresses rouge and Bourgogne Aligoté on the family plots.

The vineyard is cultivated in a sustainable manner, with organic fertilization, ploughing and Guyot pruning. pruning. The following are not used on the estate: weedkillers, chemical fertilizers, insecticides and anti-rot treatments. The grapes are harvested by hand, and the vinification process is designed to be as natural as possible, with minimal intervention.

"A confidential vintage ... and that's a shame!

Auxey-Duresses is located at the threshold of a valley which, from the Côte de Beaune, plunges into the Hautes Côtes on the road to La Rochepot and Autun. Neither too light nor too dark ruby in color, this balance continues on the nose, rich in berries such as raspberry and blackcurrant, with a hint of spice. On the palate, the wine is fine and supple from the outset, sappy, tannic and elegantly woody, without lacking in freshness.
