"What a great discovery!"

A still confidential estate, Nicolas Fèvre's cuvées are a joy to discover. The result of the most natural winemaking possible, this Saint-Romain has a deep, intense red color. The nose is airy, with notes of notes of red fruit (raspberry cherry) with a mellow woodiness. The tannins are fine and silky structure and good length.

Viticulture

Organic fertilization, horse-drawn ploughing, simple guyot pruning. The following are not used on the estate: weedkillers, chemical fertilizers, insecticides as well as anti-rot treatments

Winemaking

Cold pre-fermentation for 5 days, maceration for around 15 days, finishing at around 30°C. Vinification as natural as possible. Yeasts for alcoholic fermentation and lactic acid bacteria for malolactic fermentation are natural, with no addition of selected exogenous strains.

Breeding

100% in barrels (20% new) for 12 months, then mass blending in stainless steel tanks for 4 months. Bottled without fining, with light filtration.

While Nicolas Fèvre's main activity is wine consulting, in 2014 he set up his own small estate by taking over part of the family's previously tenanted vineyards, in saint-romain, auxey-duresses and burgundy-aligoté.
