"A confidential vintage ... and that's a shame!
Auxey-Duresses is located at the threshold of a valley which, from the Côte de Beaune, plunges into the Hautes Côtes on the road to La Rochepot and Autun. Neither too light nor too dark ruby in color, this balance continues on the nose, rich in berries such as raspberry and blackcurrant, with a hint of spice. On the palate, the wine is fine and supple from the outset, sappy, tannic and elegantly woody, without lacking in freshness.

Organic fertilization, horse-drawn ploughing, simple guyot pruning. The following are not used on the estate: weedkillers, chemical fertilizers, insecticides as well as anti-rot treatments

Winemaking
Cold pre-fermentation for 5 days, maceration for around 15 days, finishing at around 30°C. Vinification as natural as possible. Yeasts for alcoholic fermentation and lactic acid bacteria for malolactic fermentation are natural, with no addition of selected exogenous strains.
Breeding
100% in barrels (20% new) for 12 months, then mass blending in stainless steel tanks for 4 months. Bottled without fining, with light filtration.

Flattering aromas of raspberry and blackcurrant with a touch of spice, fresh and spring-like on the 2nd nose.

About the domain :
While Nicolas Fèvre's main activity is wine consulting, in 2014 he created his own small estate by taking over part of the family's vines, which had previously been farmed out, in Saint-Romain, Auxey-Duresses and Bourgogne-Aligoté.
