Winemaking
Traditional: destemming of Pinot Noir grapes, maceration in a vat of only the berries. After a day and a half, the vat is "bled", extracting only the juice that has turned pink (46%). The juice is vinified and aged as a clear Chardonnay or Pinot Noir wine.

About the domain :
In the heart of the Côte de Sézanne, brothers Vincent, Thomas and Florent Collet have given new impetus to the family domaine since the turn of the century, on the 15 parcels around Fontaine-Denis. The cuvées are of good quality, and the Anthime range, which claims to be aged in wood, stands out from the rest.

In the early 20th century, the Collet family sold their grapes to the wine trade. René Collet, a cooperative member, launched his champagne in 1973. His 3 sons, Thomas, Vincent and Florent, set up between 2001 and 2011, and decided to produce their own cuvées. They have 5 hectares of vines in the Sézannais region.

About the domain :
The story of Domaine Collet is a beautiful one: born into a modest family of winemaker-farmers from Fontaine-Denis, it was quite simply in 1973 that René Collet decided to create his own brand. With the help of a large cooperative, he developed the estate through the acquisition and planting of Chardonnay and Pinot Noir vines, ideally located in the Fontaine-Denis area. The early 2000s brought changes: two of Mr. Collet's three sons joined the company, and a new winery and barrel cellar were built.
