"Congo 2015 is a selection of the best Grenache bunches from an old vineyard in the village of Real de San Vicente, on granite soils, from the same plants as one of the vineyards that produce Tres Patas. Only the 2007 and 2009 vintages had previously been produced, as the grape-by-grape harvest was too tedious. This wine was aged in French oak foudre (the equivalent of ten Burgundy barrels, or 2,280 liters) for 18 to 20 months. It reveals notes of sweet fruit and the austerity of granite soils. About the domain :
I've had a selection of very fine Canopy wines sampled on several occasions. The wines are always fresh, even in a sunny vintage like 2015. The vines are worked organically, the fermentations are all carried out with indigenous yeasts, and the wines are aged in two- or three-wine barrels, with a preference for large containers, which helps to round out the tannins without marking the wines. A very high-level domaine, with wines that perfectly reflect the vintage and their chosen terroir.
