Initiated by Christophe Fargier and his American friend Kurt Huffman, Lyon's first micro-brasserie was born in 1997 in the fast-growing Gerland district. They named it Ninkasigoddess of beer in Sumerian mythology.

Since 2012, the Ninkasi brewery has been located in the former Tarare dye works, which have been completely refurbished with an "Eiffel" metal structure that gives the Fabrique an exceptional character. Tarare's water, from the Joux dam, is renowned for its purity and softness. It is ideal for brewing.
Ninkasi beers are made exclusively with natural ingredients: barley malt, hops, water and yeast.
The Ninkasi brewery produces blond (Pilsen), white, amber (Pale Ale), black, triple (Bière d'Abbaye), I.P.A (India Pale Ale), as well as limited Grand Cru series and a Christmas beer.
