All operations are carried out in the absence of oxygen thanks to the use of dry ice to preserve the aromas of the grapes and reduce the use of SO2, de-stemming followed by very gentle pressing in a vacuum press, must fermented at a controlled temperature for approximately 15 days.

A vermentino more exotic than its Corsican neighbors, but well-made and pleasant to drink.
