Manual, selection made in 6 vineyards: Lamole, Vincigliata, Olmo, Londa, Montefili and Siena (each vineyard harvested up to 8 times for a better selection).
Winemaking
After the 1st selection in the vineyards, a 2nd takes place in the cellar before de-stemming, then gentle pressing, fermentation with natural indigenous yeasts in 225L open-top barrels for the smaller parcels and in 50hl barrels or stainless steel tanks for the larger parcels, 6 daily manual punchings of the cap and pumping over, maceration for 7-10 days, malolactic fermentation in old barrels and 50hl barrels.

About the wine:
Another fine year, even if some of the 2019 wines - but not the Testamatta - lacked a little concentration. Relatively light in color, it's at the other end of the density scale from the wines of the early 2000s. The raspberry and redcurrant aromas are piquant, and both the nose and palate display admirable delicacy and restraint. Very elegant and pure, its fine acidity gives it excellent length and ageing potential. 2023 - 2036

About the wine:
A pure expression of Sangiovese, Bibi Graetz 2019 Testamatta is a wine in constant evolution. Bibi has added an additional 17 hectares of vineyards to the program, including 12 hectares in Fiesole (north of Florence) and 5 hectares in San Donato in Colle (south of Florence) with 70-year-old vines. The framework of the wine is made up of fruit from old vines planted in the 1950s in the cool-climate Chianti Classico sub-region of Lamole. These new terroirs bring much more aromatic nuance and complexity to the wine, with scents of blue flowers, candied orange peel, damp earth and plummy black fruits. The white soils of Alberese add a strong chalky mineral signature to the finish of this elegant, linear Tuscan red.
