After the first selection in the vineyards, a second selection takes place in the winery before de-stemming, then plot-by-plot pressing in open-top barrels, fermentation with natural indigenous yeasts for up to 2 weeks, 6-8 daily manual punchings of the cap and pumping-over, maceration on the skins for a further week, malolactic fermentation in old barrels.

About the wine:
Another excellent wine from Bibi Graetz, made from a selection of old Sangiovese vines. The nose is herbaceous and spicy, fragrant but with salty aspects rather than floral or fruity. Intense and direct, it hits you hard, with energy and forward motion. It's so elegant and well-defined, soft yet lively and energetic, with beautifully executed tannins. Almost sumptuous and chewy, it gives weight and texture to the palate while being quite light and airy overall. Complex and invigorating, fresh and wild at the same time - I love its character, it's pure but with a sense of authenticity that perfectly encapsulates the terroir and winemaking philosophy. It finishes with notes of mint, licorice, spicy blackcurrant and fresh cherry that are extremely appetizing! 2026-2045

About the wine:
Intense aromas of violet fruits such as raspberry, spices, lead pencil and granite. Fragrant flowers are also present. Full-bodied, tight with balanced tannins that show transparency and concentration. Crisp and very long. Best after 2028, when it will open up and integrate beautifully.

I love this wine, its lyricism and generosity, and its ever-vibrant representation of fruit and stone. It's so juicy, so stretched out, it matches the vintage, builds on its low yields, with reines-claudes, raspberries, plums, sweet spices, lemongrass, a minerality sprinkled with mandarin peel and sage. Translucent yet full of flavor, it once again invites you to sit back in a chair, gather your friends and enjoy. A brilliant wine and a brilliant winemaker in Bibi Graetz.
