Cabernet Sauvignon: destemmed. Fermentation in concrete vats without the addition of yeast. Daily punching down and pumping over. Maceration for 40 days at 25°C. Chenin Blanc : direct pressing then settling. Fermentation in barrels.
Breeding
18 months in oak barrels (60% 1 wine, 40% 2 wines) for Cabernet Sauvignon. In barrels for Chenin Blanc
