Winemaking
Cabernet Sauvignon: destemmed. Fermentation in concrete vats without the addition of yeast. Daily punching down and pumping over. Maceration for 40 days at 25°C. Chenin Blanc : direct pressing then settling. Fermentation in barrels.
Breeding
18 months in French oak demi muid (20% 1 wine, 40% 2 wines, 40% 3 wines) for Cabernet Sauvignon, in barrels for Chenin Blanc.

Intense color, still young. Concentrated nose, revealing beautiful aromas of candied red fruit, graphite and black pepper. On the palate full-bodied, with a fine, tight tannic structure and fine balance. A fine wine.
