At optimum maturity
Winemaking
Daily de-stemming, punching of the cap and pumping over, vat temperature maintained at 25° during alcoholic fermentation, followed by a long maceration under marc. Run-off and malolactic fermentation in vats.
Breeding
On fine lees. In spring, marsanne is blended to accompany the opening of the wine and enhance the balance of this cuvée. Bottled with light filtration.
