A blend of Syrah and Chenin du Sud in a complex, refined ensemble. The nose delivers aromas of violets, coffee and black fruit, with a mouthful of savory flavors. The structure is marked by powerful tannins. Very limited quantities!

Winemaking

Syrah: destemming. Natural fermentation in concrete vats without the addition of yeast. Daily punching down and pumping over. Maceration for 40 days at 25°C. Chenin Blanc: direct pressing followed by settling. Fermentation in barrels.

Breeding

18 months in French oak demi muid (35% 1 wine, 65% 2 wines) for Syrah. In barrels for Chenin Blanc

I was expecting a pleasant surprise, but in the end a wine that clearly lacks personality and character.
