Cuvée mêlant la Syrah au Chenin du Sud, dans un ensemble complexe et raffiné. Le nez délivre des arômes de violette, de café, fruits noirs dans une bouche savoureuse d'arômes. La structure est marquée par des tanins puissants. Quantités très limitées !

Winemaking

Syrah: destemming. Natural fermentation in concrete vats without the addition of yeast. Daily punching down and pumping over. Maceration for 40 days at 25°C. Chenin Blanc: direct pressing followed by settling. Fermentation in barrels.

Breeding

18 months in French oak demi muid (35% 1 wine, 65% 2 wines) for Syrah. In barrels for Chenin Blanc

I was expecting a pleasant surprise, but in the end a wine that clearly lacks personality and character.
