Some plots are vinified as whole bunches, carbonic maceration: the grapes are placed whole in vats and left intact for the entire vatting period (20 days). Other plots are destemmed and worked in the traditional way: pumping over, délestage or regular punching of the cap at 27 - 29°C.

Since the 1970s, this certified organic estate has been one of the jewels in the appellation's crown, appearing in the Guide with unfailing regularity.
