Native yeast, slow pressing, fermentation in underground tanks for 10-14 days with temperature control at 18-20°C.
Breeding
Aged for 9 months in terracotta ovoid tanks (700 L eggs). Handcrafted in Tuscany, these vats bring out the wine's full maturity through natural stirring of the lees and micro-oxygenation of the terracotta.

About the domain :
The estate is located on the site of an ancient medieval mansion that was the origin of the commune of La Chapelle-Heulin. Rémi and Jean-Jacques Bonnet have been running this 40-hectare estate organically since 2005, and are now moving towards biodynamic viticulture.

About the domain :
The Bonnet brothers, Jean-Jacques and Rémi, heirs to the family estate in La Chapelle-Heulin, converted their 40 hectares of vines to organic farming in 2005. Four terroirs have been vinified separately to bring out their finest expression. On Les Dabinières, a warm soil of gneiss and micaschist, the fruit expresses itself with roundness. On the amphibolite and micaschist soils of Les Gautronnières, the melon becomes mineral and taut. The poor, granitic soils of Les Laures produce a denser, fuller wine. Made only in good years and aged for 18 months on the lees (minimum requirement), Cru Communal Goulaine reveals its full depth and seems well equipped for ageing. Cuvées full of energy and sparkle!

A "Vin de France" that is a departure from our usual Muscadet references, but with a lovely, well-mastered richness that should age well...in a good cellar!
