De-stemming, cold pre-fermentation maceration for a few days, followed by temperature-controlled alcoholic fermentation. Pigeage and/or pumping-over are more or less frequent, and maceration lasts 20 to 30 days.

10 to 12 months in wooden vats and demi-muids, without fining or filtering before bottling

About the domain :

With each passing vintage, the Roblin brothers assert themselves with greater regularity. The vineyard, mainly composed of white soils, covers 17 hectares on the slopes of Maimbray and Sury-en-Vaux. Special mention goes to the original white, which offers a very fine Sauvignon. An interesting address at reasonable prices.

About the domain :

Matthias Roblin took over this family estate, whose origins date back to the 18th century, in 2000. His brother Émile joined him six years later. The vineyard extends over 19 hectares, which are cultivated "using integrated farming methods with an organic bias".
