Selection of parcels from a very complex soil of sandy loam over a bedrock composed of altered green and purple shale, sandstone and phtanite. A south-facing plot on a steep slope, where Mediterranean flora flourishes.

Alcoholic fermentation in oak barrels, after static cold settling. Malolactic fermentation not carried out to preserve tension.

Breeding

12 months on fine lees, in 228L new oak barrels (10%) and from 1 to 8 wines, then 6 months in stainless steel tanks. Regular stirring of the lees.
