"A winter rosé to discover.
A rosé in winter? Perfectly! This rosé has incredible aromatic richness. Have fun tasting it blind, you might mistake it for a white. On the palate, it's a veritable concentrate of wild strawberry and rose, enveloped in a beautiful minerality. This cuvée is perfect for food and wine pairings; try it with sushi, red mullet with tomato, sweet and sour dishes... This rosé, known as "de saignée", meaning a few hours of maceration before extraction of the lightly colored juice, can be kept for several years. An original wine to discover!

About the domain :
A true pioneer of the appellation's qualitative revival, this estate boasts a variety of terroirs which it uses to create blends that balance finesse and structure. The wines are of the highest quality, and are constantly improving. In summer, François and Anne Collard offer walking and mountain-biking tours around the estate to discover their terroir and the flora and fauna of the region. Well worth the detour! An excellent estate with a few exceptional plots of old vines, producing consistent, discreet wines that win us over every year.

François Collard is a regular in the Guide, with wines that often rank highly. Established in 1994, he produced the first bottlings from his family's vineyards (65 ha certified organic since 2014) under two labels: Mourgues du Grès, owned by the Ursulines de Beaucaire convent until the Revolution, and La Tour de Béraud, named after a 14th-century fire tower overlooking the vast Beaucaire plain. Never short of ideas, the Collard couple propose to discover all facets of the estate via an unmarked trail equipped with Bluetooth terminals.

Far from today's standards, this rosé is dominated by the concentration of ripe fruit, accompanied by floral notes. More lively and dynamic than dense and fleshy, it is supported by silky, spicy tannins, and well-stretched by a touch of minerality that counterbalances the power of the 14% and also brings balance and lots of softness. Well-built enough to withstand a little more cellaring. This singular rosé will be an affable companion for a starter of Scottish smoked salmon, or with a Bo bun salad with little crab and crispy shrimp egg rolls. Score = 3.7.
