Domaine de Bonserine
The vineyards of Bonserine Estate are managed in a reasoned way, with the use of composted manure and spring ploughing to encourage deep rooting of the vines. Controlled grassing of the vines and green harvesting help to control the load, which is limited to 4 to 6 bunches per vine. Vinification aims to express and reveal the potential of each terroir. Each plot is vinified separately, without yeasting, using its own indigenous yeasts. The wines are then aged for between 22 and 36 months, depending on the specific qualities of each vintage.
