"Grenache, Viognier and Roussanne were harvested in equal parts in mid-August, at night, to compensate for the heat of the vintage. After 6 months in vat, this white delivers a subtle bouquet of lime blossom, apricot and chamomile. A hint of brioche is added to this well-matched palette on the palate, which is full-bodied, comfortable but not excessive, and energized by a long finish with grapefruit accents". After 6 months in vat, this white delivers a subtle bouquet of lime blossom, apricot and chamomile. A hint of brioche is added to this well-matched palette on the palate, which is full-bodied, comfortable but not overpowering, and energized by a long finish with grapefruit accents.
About the domain :
Established at the foot of the Notre-Dame-de-Grâce sanctuary in Rochefort-du-Gard, not far from the ancient marshes drained by the monks in the Middle Ages, this estate, born in 1994 from the merger of three small holdings, has shown great consistency in its quality. Succeeding his parents Jean-Pierre and Dominique, Romain Dubois and his wife Laure, now alone at the head of the estate, have created a new winery and converted the 20 ha of vines to organic farming.
