This Pax 2019 is composed of 65% Grenache, for its ageing potential and generosity, and 35% Syrah for its finesse and freshness. Silky tannins support a generous, smooth palate with notes of licorice, caramel and prunes and a spicy finish. Perfect with pork filet mignon au poivre or pan-fried veal liver with raspberry vinegar.

Middeldiepe tot diepe ruby kleur. Aan de neus rijp braam- en cassisfruit, donkere tonen, kruiden, wortels, vegetaal en dan ook wat zuurtjes. In de mond hetzelfde rijpe donkere fruit, mooie rijpe en sappige zoetigheid, prima vulling, fijne zuren, grip, kruidigheid en specerijen, goede balans. In de finale zit nog steeds dat zoete, rijpe. Mooi hoor. En dat mooie zoetje is te danken aan de Grenache. Score: 16,5/20

Grenache and Syrah come together in an atypical, full-bodied Ventoux. The supple attack is lined with dense, melt-in-the-mouth flesh, while the caressing, enveloping tannins give way to a great bowl of savory fruit flavors with sweet spices, complemented by empyreumatic nuances from long ageing. The wine lingers until the finish, which is persistent and equally generous, enhanced by a hint of cinnamon and a few notes of zan. You forget the power of the 14.5% of this cuvée, for it is all tenderness and voluptuousness, without any heaviness, with great volume and juiciness. What's more, this remarkably well-balanced wine is extremely drinkable and has good ageing potential. Ready to drink now, it matched admirably after aeration with a long-marinated and simmered civet of farm rabbit, with garlic purée and pan-fried marbled lepiotes. Score = 4.1.
