Hand-operated only in perforated 15 kg cases

Winemaking

Vinification using the mille-feuille method, with destemmed and unstemmed slices underneath. A pied de cuve from the same vines is added to the marc to kick-start alcoholic fermentation. AF temperatures range from 20 to 27°C. Maceration lasts 15 days. Pressing without reboiling, and end of AF in the alcoholic phase. MLF then begins spontaneously. This wine is neither filtered nor sulfited.

to begin with, you should warn in bold that this is a natural wine, with all that that entails. Deviations: gouache and stable finish. What's more, your descriptions of this wine are wrong...color, nose and mouth. Natural wines are a scam. There are false connoisseurs for this type of wine, but it's abuse of vulnerable people. There would never have been any great wines without a minimum addition of sulfur. Pure heresy.
