Topa
The brand Topaa young Basque company based in Bidart (Pyrénées-Atlantiques, France) began its adventure in 2016, with the aim of producing an artisanal cider with a Basque identity, 100% local and 100% natural. The cider Topa is made from a diversity of apples, around 12 different varieties, untreated and locally produced, to name but a few (Anisa, Urteby, Mendiola, Minxuli, etc.). This Basque cider is made in the traditional way, with slow, natural fermentation at low temperature for around 4 months.

In Basque, Topa means "the encounter", and that's what its creators are all about. With this new-generation cider, Topa brings a touch of modernity to this historic Basque beverage, and focuses on conviviality and moments of relaxation around a fine bubble between mountain and ocean. 

The development of apple cultivation in the Terres Basques officially dates back to the 12th century, and large-scale cider production continued until the 18th century, when it suddenly fell out of favor. It wasn't until the 90s that this local beverage was revitalized and restored to its rightful place in the Basque world.
