Julien Ilbert's wines are steadily progressing in a modernist spirit shared by many other young winemakers in the area, with organic conversion as a trigger. About the domain :
Julien Ilbert and his wife Sophie are leading the new destiny of this vineyard, which has been in existence since 1900. Breaking with his father's model, Julien has turned to bottling, and has set out to create a new identity for the estate, putting eloquent, modern labels on his various cuvées. His cuvées, once immediate and fruity, are becoming more and more substantial. He makes the most of the 23 hectares planted with auxerrois, the local name for malbec, and the one hectare of vermentino, a southern grape that finds a fitting home here. He has isolated three terroirs: Lac aux Cochons, with its iron-rich limestone soil; Au Cerisier, on red clay; and, above all, Les Peyres Levades, a limestone terroir that stands out year after year.
