Traditional for Merlot: crushing, short cold maceration, alcoholic fermentation in temperature-controlled vats at 25-27°C with daily pumping over, vatting for 15 days and pneumatic pressing at low pressure; Thermovinification for Cabernet Sauvignon: heating, maceration for 6 hours, alcoholic fermentation, pressing at mid-fermentation, and malolactic fermentation at the end of alcoholic fermentation.

12-24 months in vats with racking every 3 months

About the domain :

Jean-Luc Buffeteau, who returned to the family land in 1998, manages 29 ha of vines on the rolling hills of the Entre-deux-Mers region, in the heart of the Sauveterrois, in the communes of Castelviel and Gornac. He produces two labels, La Grande Métairie and Haut Dambert.
