At optimum maturity
Winemaking
Skin maceration, cold and under inert gas for muscadelle and semillon and 6 to 8 hours for sauvignon, pneumatic pressing at low pressure (maximum 1.6 Bar) under inert gas, settling by flotation under inert gas, alcoholic fermentation in temperature-controlled stainless steel tanks between 15 and 17°C.
Breeding
On fine lees for several months with regular stirring, fining and stabilization of the wines, then pre-filtration.

Marked by citrus, pineapple and ripe pear.
Mouth
Full-bodied with good aromatic persistence, the Sauvignon brings fruitiness combined with Muscadelle and Semillon adds roundness.

About the domain :
Jean-Luc Buffeteau, who returned to the family land in 1998, manages 29 ha of vines on the rolling hills of the Entre-deux-Mers region, in the heart of the Sauveterrois, in the communes of Castelviel and Gornac. He produces two labels, La Grande Métairie and Haut Dambert.
