Cold skin maceration, low-pressure pneumatic pressing and settling by flotation under inert gas, alcoholic fermentation in temperature-controlled stainless steel vats at 15 to 17°C.
Breeding
On fine lees for several months with regular stirring, fining, wine stabilization followed by pre-filtration.

Jean-Luc Buffeteau, who returned to the family land in 1998, manages 29 ha of vines on the rolling hills of the Entre-deux-Mers region, in the heart of the Sauveterrois, in the communes of Castelviel and Gornac. He produces two labels, La Grande Métairie and Haut Dambert.
