In the glass, this Saint-Véran with its beautiful intense yellow color seduces with its elegant, airy nose enveloped in notes of white flowers and a hint of smokiness. Aromas of yellow fruit and toast intermingle to give this delicate grand blanc its full character. The attack is voluminous, with yellow fruit expressing itself with precision.

Nestled above the old village of Davayé, the "Chailloux" parcel enjoys an ideal South-South-East exposure. Planted in 1971, this vineyard is now expressing its full potential. Planted on pebbly clay-limestone soil, it is pruned in the Mâconnais style.

Slow pneumatic pressing at low pressure. Natural static settling for 72 hours at very low temperature. Alcoholic fermentation for 7 months in oak barrels (70%) and stainless steel tanks (30%), with no yeast added. Spontaneous malolactic fermentation.

Elegant, evoking smoky, vanilla notes for the moment, as well as scents of white flowers, yellow fruit and toast after shaking.

About the domain :
This estate, located in the heart of the best Davayé terroirs, is owned by the Lycée Viticole de Mâcon Davayé, and for some years now has been courageously practicing organic farming on no less than 16 hectares, mainly in the Saint-Véran appellation. The winemaking approach here has a strong impact on the style of the wines, with very unadorned juices undergoing prolonged fermentation at low temperature. The result is a modern, seductive profile. Note a rare and more original production of reds, which we were unable to taste, and for the anecdote, some highly esteemed goat's cheeses!

About the domain :
The Lycée Viticole de Mâcon-Davayé has been training winemakers from Burgundy and beyond for generations. The adjoining 16-hectare estate is farmed organically, and Frédéric Servais, the cellar master, aims to produce the most "natural" wines possible.
