Roundness, fatness, tension and well-integrated oak, the palate is harmonious". (Le Guide Hachette des Vins 2021) It's the age of the vines (75 years) and the exceptional ripeness of the grapes that give this wine its special particular density.

Slow pneumatic pressing at very low pressure, natural 72-hour static settling at very low temperature, alcoholic fermentation for 6 months without the addition of yeast in oak barrels (1/3 in new barrels and 2/3 in wood from 2 to 10 wines), spontaneous malolactic fermentation.

Light yellow with green highlights
Nose
Initially very fine, complex balance, with first aromas of mango, very smooth. Woody, smoky and mineral notes complete the nose after aeration.
Mouth
Full, fresh attack. Dense on the palate, expressing terroir through spices and weathered rock and a touch of mango. The finish is long, straightforward and freshly acidic.

About the domain :
This estate, located in the heart of the best Davayé terroirs, is owned by the Lycée Viticole de Mâcon Davayé, and for some years now has been courageously practicing organic farming on no less than 16 hectares, mainly in the Saint-Véran appellation. The winemaking approach here has a major impact on the style of the wines, with very unadorned juices undergoing prolonged fermentation at low temperature. The result is a modern, seductive profile. Note a rare and more original production of reds, which we were unable to taste, and for the anecdote, some highly esteemed goat cheeses!
