About the domain :
Dom Pérignon is the most widely distributed and therefore best-known prestige Champagne in the world. The emotions it arouses stem first and foremost from the extraordinary quality of the hundreds of hectares of Grand Cru that form the inimitable core of its blends. The surgical expertise of the house and its cellar master Vincent Chaperon ensures an ideal balance between Chardonnay and Pinot Noir. Both white and rosé undergo an original ageing process, with different temporal phases (called plenitudes) offering taste characteristics as brilliant as they are different. Work is underway in Hautvilliers, the cradle of the cuvée, to reconstitute the historic cellar of Dom Pérignon, who would certainly be proud of the current wines.

About the wine:
A pale gold color animated by trains of fine bubbles for this sunny vintage. After long aging, it opens with a wide range of aromas: hints of toast, baked brioche, melted butter, caramel and confectionery, yellow peach, dried apricot, raspberry jelly, enhanced by hints of spice. These complex notes of ripeness, toast and fruit, come through on an intense palate, particularly full, rich, unctuous, creamy, gourmand and persistent, where everything appears well blended. A fine acidity contributes to the overall finesse, leading to a fresh, lemony finish.
About the domain :
The prestige champagne par excellence, named in homage to the "father of champagne". In charge of the vineyard and cellar at Hautvillers Abbey, Dom Pérignon, who is credited with inventing the méthode champenoise, demonstrated his mastery of the art of blending that makes great cuvées. After 28 years with the house and fifteen vintages, his distant successor, Vertusian Richard Geoffroy, handed over the reins in 2019 to Vincent Chaperon, who had worked alongside him for thirteen years. Dom Pérignon is always vintage. Its composition remains a secret, and each vintage is a creation. The most we know is that it uses Chardonnay and Pinot Noir from the Côte des Blancs and Montagne de Reims Grands Crus, as well as from Hautvillers (1ercru), in memory of Dom Pérignon.

Disgorged in January 2023, Dom Pérignon 2015 presents a singular, ethereal profile with aromas of white pepper, iodine, ripe orchard fruit, toast, smoke, herbs and spices. Medium- to full-bodied, layered and structured, it's enveloping and round, with a delicately phenolic mid-palate that highlights dry, chalky extracts, and ends with a sapid, penetrating finish of gourmet bitterness. This version of Dom Pérignon, though endowed with the usual charm and vinous generosity that characterize the label, is distinguished by a delicate structural austerity and a particularly phenolic profile, giving rise to a remarkably linear and well-defined style that diverges markedly from more familiar expressions of Dom Pérignon.

About the wine:
Fine toasted reduction, hazelnut, dried fruit, root and vegetal imprint emerge on the background of the nose. The marker of the vintage is present. The palate has good volume and amplitude, the bubbles are fine, and the wine retains good length. but not to the level and finesse of the 2013.

Pale honey color with hints of green leaves. Still very tight and taut, as if it has yet to relax and exhale. Notes of orange peel, but less of the rich citrus cream that so often characterizes Dom Pérignon than usual.

The 2015 Dom Pérignon is formidable. Brilliant and balanced, the 2015 shows tremendous energy. Notes of citrus peel, white flowers, mint, white pepper and slate follow one another on the palate. The tension and backbone are magnificent, with bright saline notes that carry through to the mid-palate and finish. This is a fine performance in what has proved to be a tricky vintage. I'm curious to see how the 2015 will evolve in the years to come.

A super-complex champagne with mellow tension. Aromas of coffee beans, lemon peel, burnt sugar, chalky minerality, barley candy and tarte tatin. Fine, zesty bubbles with flavors of lemon leaf, aspirin and mirabelle plum, plus a touch of grapefruit bitterness that keeps the tension up. Pungent but integrated acidity, medium body and toasty finish. Drink now.
