Destemming, pre-fermentation cold maceration to facilitate color extraction, temperature-controlled fermentation, pumping over and punching down without the use of pumps, delestage carried out halfway through fermentation, total maceration time approximately 3 weeks.
Breeding
For 6 months in barrels and casks, then matured for at least 18 months in the bottle before marketing.

Mouth
Small red fruits followed by hints of leather and spices, present but very elegant tannins, fine structure, full body, long persistence, we discover in this wine unexplored characteristics of a grape variety capable of defying time.

About the wine:
Pale and still ruby, although there is a garnet tinge. Smells of cherry pie. Intensely fragrant - lavender, cigar, dried and crushed eucalyptus leaves, masses of pink and Sichuan peppercorns. Delicate poached strawberries and pomegranate juice. The wine is so peppery and spicy that it's almost reminiscent of chipotle, dried chili pepper, from the middle to the end of the palate. The wine has a tight, almost fiery texture that seems to come more from the spices and fruit than from the tannins. Bewitching. Stunning. Singular. 2023-2027

About the wine:
The 2019 Cannonau di Sardegna Riserva is dark, rich and charcoal, with a whiff of savory herbs that gives way to crushed stones and strawberry sauce. It's elegant and refined, easily unfurling silky waves of ripe red and blue fruit on the palate. A touch of tart citrus adds contrast. The 2019 leaves a weave of soft tannins as notes of wild blueberry and licorice slowly fade. This wine is already magnificent, but it should also excel over the next three to five years. 2024-2028
