Alain Cavaillès
Located in the Upper Aude Valley, in the commune of Magrie, Alain Cavaillès began the adventure in 1999, at the time a novice in the field. A passionate winegrower in life, he seeks above all overall coherence in everything he undertakes, and this applies as much to the vineyard as to winemaking. The vineyard's organic and biodynamic viticulture was the obvious choice, with one overriding principle in mind Alain Cavaillès respect for the living. 
In the heart of theLimoux appellation, on the Autan terroir, clay-limestone soils and diverse climatic influences - Mediterranean, oceanic, Pyrenean - bring balance and typicity to the wines of Domaine le Moulin de l'Alon.

In this famous Limoux appellation, where sparkling whites such as Blanquette de Limoux, Crémant de Limoux and Limoux whites reign supreme, Alain Cavaillès also produces excellent red wines under the IGP Haute Vallée de l'Aude label. In total, the Le Moulin de l'Alon estate covers 8.5 hectares organized into 17 parcels, planted with 7 grape varieties: mauzac, chardonnay, chenin, pinot, merlot, syrah, cabernet-sauvignon.

This white wine is the perfect blend of fruit, citrus and white flower aromas, and lively tension. The blend of 70% chardonnay and 30% chenin delivers a complex, mineral wine with a pleasantly fresh persistence.

Perla Nostra is a sweet, 100% Mauzac effervescent made using traditional methods. Light in alcohol, with delicate bubbles and pronounced apple aromas, it is the ideal accompaniment to desserts such as tarte tatin, pear crumble, crêpe suzette... A delicious sweetness.

This Crémant offers admirable balance thanks to a well-mastered blend. A pleasant, charming bubble exuding the aromas of Chardonnay (50%), the freshness of Chenin (40%) and the vinosity of Pinot Noir (10%).
