About the domain :
Mas Conscience has changed hands and is now run by Audrey Bonnet-Koenig, who was previously in charge of technical aspects at Château de Sérame and now runs La Peira after a spell at Dubourdieu. She is assisted by renowned oenologist Claude Gros. Let's wish this new team every success in perpetuating the qualitative renewal of this fine estate initiated by Nathalie and Éric Ajorque.

About the domain :
Created by Éric and Nathalie Ajorque, this 15-hectare organic estate at the foot of the Séranne massif was bought in 2000 by Roman Kocholl, who realized his dream after a long career in the digital sector in Hamburg. At the helm is Audrey Bonnet, an agricultural engineer and former director of Cave de la Peira, supported by Claude Gros, a renowned consultant oenologist.

About the wine:
The wine has a beautiful, brilliant color with a slight silver sheen. The nose is fresh, fruity and mineral. There are notes of white peach, juicy nectarine and hints of verbena. There's a racy minerality with a hint of white smoke. There are also wilder elements such as aromatic garrigue herbs and mild spices. Fresh and fruity on the palate, with a round attack. There's a tangy framework that encompasses notes of grapefruit, orange blossom and stone fruits such as peach and apricot. The finish is saline, finishing with fruit and a floral touch of jasmine.

Ample and unctuous on the palate, with remarkable aromatic purity and a disarming mineral freshness, but just enough to whet the taste buds, while the tension is tonic and accompanies the intensity of the length with fine bitters and a few saline notes. Enjoy with a starter of calamari à la Romaine, followed by a baked sea bream with thyme and bay leaves, accompanied by cocktail tomatoes preserved in olive oil. Score = 4.
