Domaine Les Hautes Terres

Domaine Les Hautes Terres is owned by Gilles Azam, and is locatedin Roquetaillade, west of Limoux, in the Haute Vallée de l'Aude, at the foot of the Pyrenees. A passionate, authentic and rigorous winemaker, Gilles Azam has been at Domaine Les Hautes Terres since 1999.

The Domaine Les Hautes Terres vineyard now comprises 9 hectares of vines divided into 12 plots at altitudes of 350 to 600 meters, covering all the terroirs of Roquetaillade: causse of lacustrine limestone, deep clay-sandstone soil (Nummulite sandstone), and the famous Turritelle marl. Since 2000, the vines at Domaine Les Hautes Terres have been cultivated using certified organic methods. In the cellar, the same precepts of naturalness and authenticity prevail, with the use of indigenous yeasts.

Domaine Les Hautes Terres wines are marked by a fine, fresh character, revealing crisp, sparkling whites with fine bubbles, and taut, clean, elegant reds.

Naturally vinified in demi-muids of several wines, this white is the expression of minerality! The Chenin brings floral freshness (honeysuckle, lime blossom) and the Chardonnay riper fruit (quince, apricot). A chiselled, straightforward and surprisingly fresh Limoux.. . A very successful bottle!
