About the domain :

Three Ravaille brothers, Jean-Marc, Pierre and Xavier, as comfortable in Pic Saint-Loup as the three fish on the labels would be in the water. For the reds, sainte-agnès blends the four main Languedoc grape varieties, while the whites are half Roussanne. The move towards biodynamic viticulture has been underway for several years. Sainte-agnès is regularly positioned as the archetypal Pic Saint-Loup red. The 2020s will nevertheless require patience.

About the domain :

L'Héritage du Pic-Saint-Loup is a historic terroir, located on the lands of the former convent of Château de Montferrand. It was in the 12th century that the first winegrowers tilled and cultivated these pampre fields. Today, this jewel of the appellation, which backs directly onto the Pic, is farmed by the Ravaille family, who were instrumental in introducing Syrah, now the dominant grape variety in the appellation. In 1992, the latest generation, Xavier, Pierre and Jean-Marc, decided to leave the cooperative to vinify these beautiful high-altitude soils. Demanding standards in the vineyard, precise expression and controlled power are the hallmarks of the estate's current production, a benchmark in the appellation.

It took 8 hours of decanting for the wine to begin to express itself. As is so often the case, you need to move up the scale to really appreciate this appellation.

Atypical entry-level Pic Saint Loup, in a light, tannin-free style. The dense palate is built around a straightforward structure, enhanced by an intermingling of fruit flavors (blackcurrant), zan, garrigue and spices. The finish is prolonged by a fresh minerality with spices in return. A short ageing would be interesting to try and gain in roundness, as well as velvetiness. Score of 3.8 for this singular, highly digestible Pic. Serve at 15°C with a gratin of eggplants stuffed Languedoc-style, topped with creamy pélardons.
