Gérald Vallée cultivates 27 hectares of Cabernet Franc, all of which have been converted to organic farming, with all the care one can imagine: tilling the soil, leaf thinning... The entire production is claimed as Saint-Nicolas de Bourgueil appellation. In the cellar, no yeast or enzymes are added to the vats.

About the domain :

Gérald Vallée set himself the challenge of switching to manual harvesting in 2004, when 90% of the Saint-Nicolas-de-Bourgueil appellation was still machine-picked. Good for him, because his wines, which used to appear episodically in our tastings of each new vintage, have since earned their stripes as great Cabernet Francs. We love the precise fruitiness of the entry-level wines, the chalky tension expressed in Le Vau Jaumier, a hillside cleared twenty years ago, and the mellow spirit of L'Envolée, a deep, opulent Bourgueil.
