Winemaking
plot-by-plot selection of grapes by variety. De-stemming, crushing, reception by gravity in temperature-controlled stainless steel vats. Cold maceration of grapes between 8° and 10°, pumping over. Alcoholic fermentation at 23°, punching down. Warm maceration at 32°, punching down.

50% in raw concrete vats and 50% in 52 hl tuns for 12 months

A great deal of precision and finesse in production and ageing, a very round and tasty wine, very consensual.
About the domain :
Domaine Dalmeran, in the heart of Les Baux in Provence, also has a lovely vineyard in Châteauneuf-du-Pape, and offers a remarkable range of wines with strong personalities that deserve to be better known. The Joyce family takes great care over viticulture and vinification, and has been particularly successful with their 2011s.

About the wine:
Primarily a blend of Grenache with Mourvèdre and Cinsault, the 2010 Chateauneuf du Pape Tradition presents a classic Provencal nose with notes of roasted herbs, kirsch, lavender, undergrowth and pinewood. The structure is impressive and concentrated, with an intense ruby-violet color.
