"Nose of forest berries, wet stones and peppercorns, which follows through to a medium body with fine tannins. Round and creamy, with fresh acidity in the center and a succulent berry core on the finish." (James Suckling 2023). Caeli means "air" or "sky" in Latin.

About the domain :
Created in 2006 by organic grower Jean Marot, this 15-hectare estate is divided into two islands: one south of Mont Ventoux, the other closer to the Dentelles de Montmirail. In 2019, it was bought by the Combe family, owners of Dom. de la Fourmone in Vacqueyras, who entrusted Florentine and Albin (5th generation) with the management of the estate, which produces exclusively certified organic Ventoux wines.

A classic Ventoux that focuses more on fruit finesse and concentration than on power and complexity. Gouleyant, dense and fleshy with soft tannins on a background of acidity and a caressing texture with intense flavors of small black berries, spices and notes of undergrowth, while retaining a decent and refreshing length on minerality. Overall, it's average and slightly overpriced, but it's the ideal companion for sharing with friends a bbq of lamb chops with Provence herbs and grilled eggplant, or a moussaka. Score = 3.7.
