Harvest
by hand. The bunches are picked whole and sorted. They are crushed and then pressed.
Winemaking
Cold settling by thermoregulation of vats at around 10° for 96 hours. Slow alcoholic fermentation with thermoregulation at max. 16° for 3 to 12 weeks, followed by malolactic fermentation. Vinification according to the "Nature et Progrès" charter.
Breeding
on lees for 10 to 14 months.

Sober and digestible, Monfarina 2014 opens the ball. Digestible: that's a constant for this estate, many of whose wines are 10.5%, 10%, even 9.5%... yet there's no under-ripeness or biting acidity: the wines are fresh but tasty, tenderly acidic.
About the domain :
Established in 1988, David and Frédéric Giachino work a dozen hectares. The vines are located in Chapareillan, near Mont Granier, facing the Bauges massif and overlooking the Isère valley. Certified organic since 2008, the domaine harvests by hand, vinifies with indigenous yeasts and uses no SO2 other than at bottling. The result? Excellent raw materials vinified gently, resulting in sober, healthy and easily digestible wines, both white and red. The rare Persian grape variety perhaps offers this address its finest result. The range is remarkably homogeneous, earning the estate its first star last year.
