About the estate:

Located on the organic slopes of Trespoux, the highest area of the appellation, Fabien Jouves offers a range of refined wines that respect the identity of the terroirs, even claiming the geological origin on the labels of his bottles. The vintages have the dual advantage of precision and freshness. The recent gravity-fed winery is combined with a return to mixed farming, with the planting of truffle trees, lavender, beehives, old orchards, and the rearing of free-range black pigs in organic farming. Several plots have been planted with old "conservatory" grape varieties: Cahours, Negral, Baral, Valdiguié Pissaïre, Magdeleine Noire, Mérille, Grand Noir de la Calmette, Gibert, Noual, Malpé, Jurançon, and others. Fabien Jouves has the plant material, winemaking tools, and talent that place him among the great winemakers of the Southwest. His wines are expressive, innovative, and, although sulfur-free, always precise and deliciously flavorful.

Although this winemaker is renowned in this appellation, I find this wine too much like a vin nouveau with its effervescence, carbon dioxide, and very pronounced freshness. An unfinished wine that is not very pleasant, even as a casual wine!
