Direct pressing for 4 hours with separation of the presses, cold settling, alcoholic fermentation: in stoneware jars for 5%, in 400L barrels for 30% and in stainless steel tanks for 65%.

About the domain :
The Reca family combines dairy ewes and winegrowing on 2 farms: Larraldea, in Saint-Just-Ibarre, and Bordaxuria, in Ispoure. On the vineyard side, 7.5 ha of terraced vineyards (in organic conversion) planted on the slopes of the Arradoy. Two farms run since 2012 by the Reca sisters: Oihana, Intza and Elorri. The latter, working in the vineyards with her partner Brice Robelet, ended her collaboration with the Saint-Étienne-de-Baïgorry winery in 2014 to produce her own wines.

About the domain :
Having left the cooperative in 2014, Elorri Reca and Brice Robelet passionately manage this small estate located in a former quarry. The vineyard, certified organic in 2018, stretches over 350 meters of slope, 80% of which is terraced. These young winegrowers do a lot of manual work to get the best out of these highly draining red sandstone terroirs. Brice also looks after a parcel in the northern Rhône Valley, whose grapes cross France and are vinified in Irouléguy.
