After slow pressing, the lightly settled juices are fermented in demi-muids (600 l) aged from 1 to 8 years and recent Stockinger foudres.
Breeding
1 year on lees with stirring in barrels and foudres and 6 months in blending vats before bottling after 2 winters.

About the wine:
This rich, dense, dry wine is a blend of the two Mansengs with a touch of Petit Courbu. It has aromas of ripe tropical fruit, accompanied by spices and a hint of pepper. This powerful wine can be drunk from 2025.
